Who’s Fancy now?

In my humble opinion, a meal made with seafood is fancy. This great tuna recipe is guaranteed to be a hit and will make any dinner memorable.


Seared Tuna

4 tuna steaks (about 6 ounces each), fresh, or if frozen, thawed completely.

1/4 cup of teriyaki Sauce

1 tablespoon honey

2 tablespoon of canola oil, divided

1/8 teaspoon of garlic powder

1/2 cup of sesame seeds

In a small bowl, stir together the teriyaki, honey, garlic powder and 1 tablespoon of the oil. Place the tuna in this teriyaki mixture, coating all sides of the steak. The longer the steaks marinades in the teriyaki mixture, the more flavor it will absorb. I usually let it marinade for 15 – 20 minutes.

Greek salads are very delicious and simple to make. I learned my version from my dear friend Stayce, (who happens to be Greek). She taught me that the secret in this wonderfully fresh salad was all in the ‘sweating’.

No, I’m not suggesting that you’ll be sweating when making this salad, what I am saying is that the magic to this salad is to let most of the ingredients blend together with some salt and a few other spices, which allows them to ‘sweat’. It’s a concept I use for a lot of my salads, and they never seems to disappoint!   After making this salad for your date, you will be in praised beyond belief.

If this van’s a rockin’…

..don’t come a knockin’!

(no, this isn’t a sure fire way on how to charm your date to get in on in a car…but who knows, may just lead there…)

“Chicken in the van” is what my nieces and nephews call this wonderful meal. When they were just toddlers, they had a rough time pronouncing the real name; Chicken Divan. Anyhow the name totally stuck. Now we are all HUGE fans of my sister’s Chicken in the Van!

This is a recipe that my sister Jan has been making for years…I assume it’s not an original recipe, since there are many versions of this meal around, but this one is wonderful and easy, and sure to please any palate!
