To many, Valentine’s day is believed to be one of those man made holidays created by the card and flower industries to make money, but not to me.

In my opinion, the meaning of this holiday is very basic; this is a day to do a little something extra to make the person in your life feel special.

If you still don’t have your ‘lover’s holiday’ plans all lined up, what are you waiting for…Get on it! Mood music, chocolate and a card are a good start…but if you want to go the extra mile on this special day, I have a wonderful recipe for you to try.

Pasta romance is both fresh and delicious. It’s amazing how these few ingredients come to life and produces such a great flavor. The vibrant red of the peppers is color is perfectly passionate color for this Valentine’s day.

Pasta Romance (makes 6 servings)

  • 1 lb of boneless chicken breast, cubed
  • 1 whole red pepper, julienned (aka, cut into long strips)
  • ½ C extra virgin olive oil
  • 3 medium tomatoes chopped (plum tomatoes work great with this recipe)
  • 3 tbsp of fresh flat leaf parsley (Italian parsley – fresh, found in the produce / herb section), chopped
  • ½ lb of feta cheese
  • 1 lb of fettuccine (cooked and drained well)

Cook the pasta according to directions, and drain well; just prior to making the chicken.

In a large skillet, heat the oil on high and sauté chicken and peppers until chicken is almost cooked through (about 4 minutes). Add chopped tomatoes, cooking for another minute. Add the chopped parsley, feta cheese and cooked pasta. Toss gently and season with salt and freshly ground pepper and serve.
