Tostadas – The Adult Taco!

Tostadas are the perfect meal…fast, fresh and delicious. They are like tacos, only better! I like to think of them as the “adult version of a taco”….and extremely versatile.

If you’re making this meal for a vegetarian, just omit the chicken, and use the vegetarian variety of refried beans. If you want to spice is up, you can either add a pinch or two of cayenne pepper to the bean mixture, or add jalapeno peppers to the beans. Or if your not a big fan of chicken, you can substitute the chicken for cooked shrimp or steak. All are so delicious.

This recipe starts by quickly baking the shells with a tasty bean mixture…this gives the tostadas a perfect crunch and the perfect temperature. PS – kids like them too!

Chicken Tostadas

6 tostadas shells
1 16 ounce can of refried beans
2 Cups of cooked chicken breast meat, sliced or shredded
1 Cup of shredded sharp cheddar cheese
1/8 teaspoon of cumin
1/8 teaspoon of chili powder
1/4 teaspoon of garlic powder
2 Cups of shredded lettuce
3/4 Cup of chopped tomatoes
1/2 Cup of chopped green onions
1 Cup of Sour Cream
Optional garnishes – sliced black olives / jalapenos / salsa / sliced avocado / guacamole / diced chipotle peppers

Preheat the oven to 350 degrees.

In a medium sauce pan over low to medium heat, combine bean, cumin, chili powder and garlic powder. Heat this bean mixture through, for about 10-15 minutes.

Place each shell on a baking sheet. Then layer each shell with the bean mixture and a little of the shredded cheese (about a tablespoon for each shell). Bake the shells for about 10 minutes, or just until the cheese melts.

Place the chicken in a microwave bowl, and heat on high for about 45 seconds, to heat.

Top the baked tostada shells with chicken, then layer with the shredded lettuce, chopped tomatoes and onion. Then garnish with sour cream. You can also garnish with olives and/or jalapenos. Enjoy..
